One of the first things I did after deciding to become vegan, was try to find foods that my kids would eat. I was convinced that there was no possible way they would follow a vegan lifestyle if I didn’t get creative, because they scoffed at the sight of anything green.
Enter…Gardein beefless ground…(cue the heavenly angel sounds)…
I am not being paid to advertise any products here. This stuff is as close to the real thing as you can get. Now, I don’t recommend using these types of products every day. But it is great in a pinch and works well in chili, tacos, spaghetti…you name it. Very easy swap to keep things vegan.
Today, I want to give you a quick and easy vegan meal to try. My kid-friendly, pan-fried tacos fool even the most die-hard meat eaters.
You will need: 1 package of tortillas, 1 package of beefless ground; 1 can of black beans, potato, 1 can of corn and toppings.
Saute your potatoes until tender. Add beans, corn, and beefless ground.
I add a little a water as well.
Meanwhile, add olive oil to a skillet and heat on medium. Once hot, fold tortillas in half and cook one side. Once browned, flip over and cook other side.
After tortillas are cooked, fill with “meat” mixture. Top with lettuce, vegan cheese and other toppings.
If you are in a really big hurry, skip cooking the tortillas and just heat them up. Voila!! Super easy and kid-friendly VEGAN dinner.
The best thing about this meal is you can make extra to freeze. Not only do you have a quick dinner the first time, you have the “meat” mixture for nachos, burritos or tacos on another day!
