About eight months ago, my 15-year-old twin girls came home and announced they wanted to be vegan. They watched some horrifying documentary at their high school (which ironically is in a small, farm town) and decided they could no longer eat meat. I was on board. I was 2 1/2 years cancer-free after a battle with triple negative breast cancer; and I was ready to make some life changes. I frequently thought about changing my diet, and eating healthier. I was working out, and feeling better. This seemed like a logical next step. Little did I know that their announcement would change not only the way I felt about food, but the way I felt about everything.
This is my story– what I have learned, what I continue to learn, and most important…why any of it matters. It will not be full of recipes, or a bunch of how-tos. There are tons of great blogs and sites for that. It is just a journey – why I am doing it, what I learn, what I try, and how I keep going after I fail. If you just want to know how to get started, especially with kids, this is for you. I don’t have a medical degree. I am not a scientist. I am a real person, on a real mission to find a way to leave a lasting mark in a good way when I leave this beautiful planet, even if it is small. I also hope my children learn to do the same because of me.
